From a perspective versed in rhythmanalysis, we analyze the multiple rhythms that characterize both the planning and the preparation and serving of traditional dishes to hundreds of diners. These rhythms are marked by materialities, actors and symbologies typical of an extraordinary context. A polyrhythm where the civic character, on the one hand, and the religious or traditional Andean celebration, on the other, cohabit among protocols, expectations, reciprocities and resolution of unforeseen events. En este artículo exploramos el entramado de relaciones sociales que se activan a partir de la relación entre comida y fiesta comunitaria durante la celebración del 3 de mayo, fiesta patronal y de aniversario fundacional de una localidad andina (Cusi Cusi, Puna de Jujuy, Argentina). Desde una perspectiva versada en el ritmoanálisis, analizamos los múltiples ritmos que caracterizan tanto a la planificación como al preparado y servido de platos tradicionales a centenares de comensales. Estos ritmos son marcados por materialidades, actores y simbologías propios de un contexto extraordinario. Una polirritmia en donde el carácter cívico, por un lado, y el religioso o de celebración tradicional andina, por el otro, cohabitan entre protocolos, expectativas, reciprocidades y resolución de imprevistos. Neste artigo exploramos a rede de relações sociais activadas pela relação entre comida e festas comunitárias durante a celebração do 3 de Maio, dia do santo padroeiro e aniversário da fundação de uma cidade andina (Cusi Cusi, puna de Jujuy, Argentina). Numa perspectiva versada em rítmica e etnografia, através de observações participantes realizadas em 2022, analisamos os múltiplos ritmos que caracterizam tanto o planeamento como a preparação e o serviço de pratos tradicionais a centenas de comensais. Estes ritmos são marcados por materialidades, actores e simbologias específicas de um contexto extraordinário. Um polirritmo onde o carácter cívico, por um lado, e a celebração religiosa ou tradicional andina, pelo outro, coabitam entre protocolos, expectativas, reciprocidades e a resolução de acontecimentos imprevistos.
