Sumario:The concept of quality is immersed in society due to the development of marketing and advertising, being used as a referential term in products that aspire to communicate that they are superior to other products. In the case of food, the definition of quality is used in various ways without being found in a clear and understandable way. In the last decade, the concept of quality began to be studied from the point of view of food purchasers, identifying 5 types of requirements: 1. Product; 2. Psychological; 3. Warranty; 4. Product/packaging system; and 5. Product/market system. Understanding the integral quality, it is possible to have a better understanding about the quality of a food and the pedagogical task of teaching how society perceives this concept, needing to be able to investigate the perception they have when defining the concept of food quality.
