In the case of food, the definition of quality is used in various ways without being found in a clear and understandable way. In the last decade, the concept of quality began to be studied from the point of view of food purchasers, identifying 5 types of requirements: 1. Product; 2. Psychological; 3. Warranty; 4. Product/packaging system; and 5. Product/market system. Understanding the integral quality, it is possible to have a better understanding about the quality of a food and the pedagogical task of teaching how society perceives this concept, needing to be able to investigate the perception they have when defining the concept of food quality. El concepto de calidad está inmerso en la sociedad debido al desarrollo del marketing y la publicidad, utilizándose como un término referencial en productos que aspiran comunicar que son superiores frente a otros productos. En el caso de los alimentos, la definición de calidad es utilizada de diversas maneras sin ser comprendidas de una forma clara y entendible. En la última década, el concepto de calidad se comenzó a estudiar desde el punto de vista de personas adquirentes de alimentos, identificando 5 tipos de requerimientos: 1. Del Producto; 2. Psicológicos; 3. De Garantía; 4. De sistema producto/envasado; y 5. De sistema producto/mercado. Comprendiendo la calidad integral, se puede lograr tener un mejor entendimiento acerca de la calidad de un alimento y la tarea pedagógica de enseñar la forma de cómo la sociedad percibe este concepto, necesitando poder indagar en la percepción que tienen a la hora de definir el concepto de calidad de un alimento.
