The development of effective processing treatments to extend their shelf life is a necessity. Films and coatings that support antimicrobials are one of the stress factors that have been proposed to meet this demand. They are of special interest to the inhibition of Listeria monocytogenes in ready-to-eat aquatic products. The objective of this article is to review the bibliography of recent years concerning the development of films and coatings for extending the shelf life of aquatic products. Methods of elaboration of films and coatings and characteristics of the main biopolymers and antimicrobials used are discussed and analyzed. Furthermore, the interactions between biopolymers and antimicrobials are discussed, along with the effects of these interactions on the functionality of films and coatings and on antimicrobial efficacy. © 2016 Elsevier Inc.
