The methodology for feasibility studies was applied, evaluating potential demand, technical requirements and financialviability over a 10-year horizon. The results indicate that there is acceptance for the implementation of the venture with a source of job generation in the evaluation area. La pérdida y desperdicio de alimentos es una oportunidad para la innovación de negocios al aprovechar la merma de alimentos por medio del valor agregado. El objetivo de esta investigación es validar si existen las condiciones económicas, técnicas y sociales para el establecimiento de un microemprendimiento de bebidas a base de frutas y vegetales en la ciudad de Guápiles, Costa Rica. La metodología para estudios de factibilidad fue aplicada, evaluando la demanda potencial, los requerimientos técnicos y la viabilidad financiera en un horizonte de 10 años. Los resultados indican que existe aceptación para la puesta en marcha del emprendimiento con fuente de generación de trabajo en la zona de evaluación.
