| Sumario: | Food loss and waste is an opportunity for business innovation by taking advantage of food loss through added value. The objective of this research is to validate whether the economic, technical and social conditions exist for theestablishment of a fruit and vegetable-based beverage microenterprise in the city of Guápiles, Costa Rica. The methodology for feasibility studies was applied, evaluating potential demand, technical requirements and financialviability over a 10-year horizon. The results indicate that there is acceptance for the implementation of the venture with a source of job generation in the evaluation area. |
