The use of mechanical saw represents a major change in the final stretch of cattle managing, facilitating their subsequent distribution through the market. The sequence of deposition shows their use for a bounded period of time. The place digged is representative of the urban boundary –in late colonial and independent times- and the transition to the process of increasing urbanization occurred in the twentieth century, which was occupying an area of old farms. El análisis del conjunto óseo permitió comparar la utilización de la sierra en un contexto arqueológico acotado cercano al Matadero Público de la Ciudad de Mendoza que funcionó durante el último cuarto del siglo XIX y principios del siglo XX. Las huellas se encuentran en su mayoría en la especie Bos taurus, en menor medida ovicápridos, en un registro típico de descarte de basura de contextos urbanos de esa época con pocas especies representadas y en su mayoría animales domésticos introducidos desde Europa. La utilización de la sierra mecánica concuerda con el momento de su ingreso en el país y representa un cambio importante en el tramo final del manejo de la res, facilitando su posterior distribución a través del mercado. La secuencia de depositación indica su uso durante un lapso de tiempo concreto.
