The mobilization and transfer of beef cattle is essential among the production systems that make up this activity because it is their means of linking. The objective of this study was to investigate the type of transportation used to move beef cattle and to describe the marketing of their meat. The bibliographic search was carried out using Google Scholar, Redalyc, and SciELO, and a brief survey was applied to 3 cattle carriers and 25 retail beef dealers in Pachuca, Hidalgo, México. The type of transport used to transfer and move beef cattle depends on the number of animals and the distance, but management strategies before and during movement are necessary to improve quality and safety. People with well-defined activities participate in the beef marketing chain, but there is still no traceability system in Mexico about the production chain. Nonetheless, in retail meat establishments in Pachuca, Hidalgo, Mexico, the meat is marketed based on the demand that is generated to satisfy the popular cuts of meat demanded by the population. |

La movilización y traslado de ganado bovino de carne es fundamental entre los diversos sistemas de producción que integran esta actividad debido a que es su medio de vinculación. El objetivo del presente estudio fue caracterizar el tipo de transporte que se utiliza para movilizar este tipo de ganado y describir la comercialización de su carne en Hidalgo, México. La búsqueda bibliográfica se realizó mediante Google Académico, Redalyc, y SciELO, además se aplicó una breve encuesta a 3 transportistas de ganado y 25 comerciantes de carne bovina al por menor en Pachuca, Hidalgo, México. El tipo de transporte que se utiliza para trasladar y movilizar al ganado bovino de carne depende del número de animales y de la distancia, pero estrategias para su manejo antes y durante su movilización son necesarias para mejorar la calidad e inocuidad. Personas con actividades bien definidas participan en la cadena de comercialización de carne bovina pero aún no hay un sistema de trazabilidad en México que dé seguimiento a la cadena productiva. No obstante, en establecimientos de carne al por menor en Pachuca, Hidalgo, México, la carne se comercializa en base a la demanda que se genera para satisfacer los cortes de carne populares que demanda la población.
