The article analyzes the question of the social organization of work in the primary phase of the complex and its impacts on the production units, with the aim of illustrating the type of social agents that tend to consolidate and those that are weakened in the dairy activity. The methodology combines the qualitative analysis of primary and secondary sources of information. The results show that the processes of technological and productive reconversion in the primary phase unleash the following transformations: a greater intensification of the productive systems, a significant increase in costs, a deepening in the division and specialization in the farm tasks and important changes in farm management; which implies, in turn, certain changes in the social organization of work. In this sense, the predominant way of organizing the milking processes in dairy farms, the system of “mediería”, goes through a series of tensions that pose a question about its continuity towards the future. In the first place, the difficulty of maintaining the work team made up of the dairy “mediero” and his family, declining in a growing trend to combine salary schemes. On the other hand, when considering the totality of tasks in the farms, an important part of the tasks fall increasingly in workers under direct or indirect wage relationships. As for family production, it continues a process of frank retraction. In this way, the results found raise the possibility of a change in the forms of social organization of work in dairy farms towards mixed schemes or with greater weight of wage forms.

Las transformaciones acontecidas en el complejo lácteo argentino en las últimas décadas abren el interrogante sobre el tipo de unidades de producción que lo integran. El artículo analiza la cuestión de la organización social del trabajo en la fase primaria del complejo y sus impactos en las unidades de producción, con el objetivo de ilustrar el tipo de agentes sociales que tienden a consolidarse y aquellos que se debilitan en la actividad láctea. La metodología combina el análisis cualitativo de fuentes primarias y secundarias de información. Los resultados muestran que los procesos de reconversión tecnológica y productiva en el eslabón primario desencadenan las siguientes transformaciones: una mayor intensificación de los sistemas productivos, un notable incremento en los costos, una profundización en la división y especialización en las tareas prediales e importantes cambios en la gestión de las explotaciones; lo cual implica, a su vez, ciertos cambios en la organización social del trabajo. En este sentido, la forma predominante de organizar los procesos de ordeñe en las explotaciones tamberas, el régimen de mediería atraviesa una serie de tensiones que plantean un interrogante sobre su continuidad hacia el futuro. En primer lugar, la dificultad de mantener el equipo de trabajo conformado por el tambero mediero y su familia decanta en una tendencia creciente a la combinación con esquemas salariales. Por otro lado, al considerar la totalidad de labores en las explotaciones, una parte importante de las tareas recaen de manera creciente en trabajadores bajo relaciones salariales directas o indirectas. En cuanto a las formas familiares de producción, las mismas continúan un proceso de franca retracción. De esta manera, los resultados encontrados plantean la posibilidad de un viraje en las formas de organización social del trabajo en las explotaciones primarias hacia esquemas mixtos o con mayor peso de las formas salariales.
