Sumario:Based on the analysis of a heterogeneous set of sources including municipal and provincial regulations, authorization files, collective bargaining agreements and work manuals, this article explores the ways in which the municipal government of the city of Mar del Plata intervened in the regulation of the gastronomic sector and analyzes its effects, scope and limitations in practice. It supports the idea that, in line with what was happening at the provincial and national levels, although the regulations enacted sought to protect the health and safety of consumers, at the same time, they had a series of effects on their workers. We identified two periods in which, in spite of certain continuities, different forms of intervention in the sector were expressed: if until 1947 the gastronomic activity was understood as a subsidiary of the hospitality industry or as just another commercial activity, from that date onwards the municipal state began to show greater concern for regulating the activity according to its specific characteristics and linking it to new notions of health and hygiene that implied transformations in infrastructure, material conditions and working practices that were part of what we understand as a process of modernization of the sector.
