It supports the idea that, in line with what was happening at the provincial and national levels, although the regulations enacted sought to protect the health and safety of consumers, at the same time, they had a series of effects on their workers. We identified two periods in which, in spite of certain continuities, different forms of intervention in the sector were expressed: if until 1947 the gastronomic activity was understood as a subsidiary of the hospitality industry or as just another commercial activity, from that date onwards the municipal state began to show greater concern for regulating the activity according to its specific characteristics and linking it to new notions of health and hygiene that implied transformations in infrastructure, material conditions and working practices that were part of what we understand as a process of modernization of the sector. A partir del análisis de un conjunto heterogéneo de fuentes que incluye normativas municipales y provinciales, expedientes de habilitaciones, convenios colectivos y manuales de trabajo, este artículo explora los modos en que el estado municipal de la ciudad de Mar del Plata intervino en la regulación del sector gastronómico y analiza sus efectos, alcances y limitaciones en la práctica. Sostiene la idea de que, en consonancia con lo que ocurría a nivel provincial y nacional, si bien las normativas sancionadas buscaron proteger la salud y seguridad de los consumidores, al mismo tiempo tuvieron una serie de efectos sobre sus trabajadores. Identificamos dos períodos en los que, a pesar de existir ciertas continuidades, se expresaron diferentes formas de intervención en el sector: si hasta 1947 la actividad gastronómica fue entendida como subsidiaria de la hotelera o como una actividad comercial más, a partir de esa fecha el estado municipal comenzó a manifestar una mayor preocupación por regular la actividad de acuerdo con  sus características específicas y ligarla a nuevas nociones de salubridad e higiene que implicaron transformaciones en las infraestructuras, en las condiciones materiales y prácticas de trabajo que formaron parte de lo que entendemos como un proceso de modernización del sector.
