Sumario:This article analyzes a set of initiatives taken by the Argentine State concerning food production, trade and consumption between 1930 and 1943. The paper considers three areas of state intervention (Ministerio de Agricultura, Oficinas Químicas and Instituto de la Nutrición) and shows the actions that were taken to improve and diversify food production for the domestic market, strengthen food control and ensure good nutrition for different sectors of the population. In each of these areas, the paper argues, the action of some experts identified with global epistemic communities, who promoted foreign developments locally, played a key role. The paper also analyzes transformations in the economy, the society and the State that favored the realization of these initiatives.
