The paper considers three areas of state intervention (Ministerio de Agricultura, Oficinas Químicas and Instituto de la Nutrición) and shows the actions that were taken to improve and diversify food production for the domestic market, strengthen food control and ensure good nutrition for different sectors of the population. In each of these areas, the paper argues, the action of some experts identified with global epistemic communities, who promoted foreign developments locally, played a key role. The paper also analyzes transformations in the economy, the society and the State that favored the realization of these initiatives. El artículo analiza un conjunto de iniciativas por medio de las cuales el Estado argentino concibió y dio respuesta a problemas vinculados con la producción, el comercio y el consumo de alimentos, entre los años 1930 y 1943. El trabajo considera tres áreas de intervención estatal (el Ministerio de Agricultura, las Oficinas Químicas y el Instituto de la Nutrición) y muestra cómo en cada una de ellas se llevaron adelante acciones para mejorar y diversificar la producción de alimentos destinados al mercado interno, fortalecer la fiscalización de alimentos y garantizar una buena alimentación para diferentes sectores de la población. En cada uno de estos ámbitos, se argumenta, fue clave la acción de algunos expertos identificados con comunidades epistémicas globales, quienes impulsaron localmente desarrollos foráneos. Asimismo, se consideran transformaciones en la economía, la sociedad y el Estado que favorecieron la concreción de estas iniciativas.
