Sumario:In the last thirty years, dairy production in Argentina has undergone major transformations, with the decrease in the number of dairy farms being one of the most significant. However, a large number of little dairy enterprises can still be found. In the Cuenca Abasto Sur, these dairy farms supply the local and regional demand for processed and semi-processed dairy products. Through a case study, the work aims to deepen the observation of the  production logic in family dairy farms belonging to the Amanecer Organizado Cooperative in the Cuenca Abasto Sur. In addition, it seeks to analyze the role and importance of organizational strategies for the improvement of milk production in these systems. This case is a good example of the importance of state technical support sustained over time, which allows access to public policies and contributes to the permanence and strengthening of these productive systems.
