Since the beginning of this century, gradual progress has been made in archaeological research and in the study of the material traces that sugar activity left on the islands, coinciding with a greater appreciation of the information that modern or historical archeology can provide. to historical knowledge. This article aims to offer a comprehensive view of the work carried out to date, as well as the reception by the Canarian society of the historical heritage related to sugar. En el siglo XV se produjo la conquista europea de las islas Canarias y su integración en el incipiente circuito comercial entre Europa, América y África. La introducción de la caña azucarera representó el primer cultivo de exportación de la economía insular, a través de su principal producto: el azúcar. Desde principios del presente siglo se ha llevado a cabo un progreso paulatino en la investigación arqueológica y en el estudio de las huellas materiales que la actividad azucarera dejó en las islas, coincidiendo con una mayor valoración de la información que la arqueología moderna o histórica puede aportar al conocimien- to histórico. En el presente artículo se pretende ofrecer una visión integral de los trabajos desarrollados hasta el momento, así como la recepción por parte de la sociedad canaria del patrimonio histórico rela- cionado con el azúcar. A introdução da cana-de-açúcar representou a primeira cultura de exportação da economia insular, através do seu principal produto: o açúcar. Desde o início deste século, tem havido um progresso gradual na investigação arqueológica e no estudo dos vestígios materiais que a actividade açucareira deixou nas ilhas, coincidindo com uma maior valorização da informação que a arqueologia moderna ou histórica pode fornecer. . Este artigo visa oferecer uma visão abrangente do trabalho realizado até o momento, bem como a recepção pela sociedade canária do patrimônio histórico relacionado ao açúcar.
