As part of a socio-anthropological investigation whose general interest has been to analyze work processes in relation to the health of workers in the construction industry in Rosario (Argentina), this article presents an analytical approach around one of the replacement modalities of energy worn out within the construction site. Commensality, as a social and cultural articulator of food intake, is key within those breaks where energy is replaced. In this article, Commensality is approached from an ethnographic perspective that focuses on the knowledge and practices that workers themselves build, namely, on the experience of those who suffer. In addition to that, studying the replacement of the energy worn out according to a typical and common pattern of the workers group, follows the use of the concept of “social reproduction” that allows thinking as a totality the spaces and times of production and consumption. Likewise, this perspective is linked to the objective of making studies that deal with health and construction more complex (usually they tend to reproduce the hegemonic biomedical approach), in order to contribute to the construction of knowledge on the subject from a critical and anthropological perspective.

Como parte de una investigación socioantropológica cuyo interés general ha sido analizar los procesos de trabajo en relación con la salud de los trabajadores de la industria de la construcción de Rosario (Argentina), en este artículo se presenta un recorte analítico alrededor de una de las modalidades de reposición de la fuerza desgastada dentro de la “obra”. La “comensalidad” pensada como articulando social y culturalmente la ingesta de alimentos, es clave dentro de esos descansos donde se reponen energías. La misma es enfocada desde una perspectiva etnográfica que pone el foco en los saberes y prácticas que los propios trabajadores construyen, es decir, en la experiencia de quienes padecen. Además, el estudio de la reposición de las fuerzas desgastadas de acuerdo a un patrón típico y común al colectivo de trabajadores, responde al uso del concepto de “reproducción social” que permite tomar como una totalidad los espacios y tiempos de la producción y el consumo. Asimismo esta perspectiva se liga al objetivo de complejizar los estudios que versan sobre salud y construcción, que en su mayoría reproducen el enfoque biomédico hegemónico, para aportar así a la construcción de conocimientos sobre el tema desde una perspectiva crítica y antropológica. Como parte de uma investigação socioantropológica cujo interesse geral foi analisar os processos de trabalho em relação à saúde dos trabalhadores da construção civil em Rosário (Argentina), este artigo apresenta um recorte analítico em torno de uma das modalidades substituição da força desgastada dentro do local de construção. A “comensalidade” pensada como a ingestão de alimentos social e culturalmente articulada é fundamental nessas pausas onde a energia é reabastecida. É abordado a partir de uma perspectiva etnográfica que focaliza os saberes e as práticas que os próprios trabalhadores constroem, ou seja, a experiência de quem sofre. Além disso, o estudo da reposição das forças desgastadas de acordo com um padrão típico e comum ao grupo de trabalhadores, responde ao uso do conceito de “reprodução social” que permite tomar como um todo os espaços e tempos de produção e consumo. Da mesma forma, essa perspectiva está vinculada ao objetivo de tornar mais complexos os estudos que tratam da saúde e da construção, em sua maioria reproduzindo a abordagem biomédica hegemônica, a fim de contribuir para a construção do conhecimento sobre o tema a partir de uma perspectiva crítica e antropológica.
