Diet is one of the main factors associated with the occurrence of noncommunicable diseases (NCDs). A change in the eating pattern is observed with a progressive increase in the consumption of ultra-processed foods that contain a large amount of calories and little nutritional value and, on the other hand, a decrease in the consumption of healthy foods such as fruits, vegetables, legumes, whole grains and seeds. This trend has a direct impact on the increase in the epidemic of overweight and obesity, the main risk factor in the development of non-communicable diseases. Approaching nutrition in terms of eating patterns is of growing interest in nutritional epidemiology. The objective of the work is to identify eating patterns of the adult population of Villa María for the 2019/2021 period.
It is a descriptive, quantitative, cross-sectional study; the sample size was 130 people between 19 and 70 years old. A structured questionnaire consisting of two sections was used for data collection: one referring to bio-socio-cultural characteristics, anthropometric data and lifestyles, and another to habitual food consumption that included a food frequency questionnaire, then, through of the Factorial Analysis of Components method, the main eating patterns were created.
Regarding nutritional status, according to the BMI, more than half of the sample (52%) has some type of malnutrition by excess, from this 52%, 23% are women and 29% are men; the majority of the population is active in 49%. The total Energy Value was located with a minimum of 2200 Calories consumed per day and a maximum of 3200 Calories. 70% do not have the habit of smoking.
Based on the results, 2 eating patterns were identified, which were called Healthy Pattern and Unhealthy Pattern, the first presents high factor loads for vegetables and fruits and the second for baked goods, starchy vegetables, cheeses, meats, processed meats and sugary drinks. ; it is necessary to carry out food education to promote a regular intake of vegetables and fruits, and reduce consumption of baked goods, red and processed meats, starchy vegetables and sugary drinks to prevent the prevalence of malnutrition by excess and the occurrence of NCDs . |

La alimentación es uno de los principales factores asociados a la ocurrencia de enfermedades no transmisibles (ENT). Se observa un cambio en el patrón alimentario con un progresivo aumento del consumo de alimentos ultraprocesados que contienen gran cantidad de calorías y valor nutritivo escaso y, por otro lado, disminución del consumo de alimentos saludables como frutas, verduras, legumbres, granos integrales y semillas. Esta tendencia tiene una incidencia directa en el aumento de la epidemia de sobrepeso y obesidad, principal factor de riesgo en el desarrollo de enfermedades no transmisibles. Abordar la alimentación en términos de patrones alimentarios es de creciente interés en epidemiología nutricional. El objetivo del trabajo es identificar patrones alimentarios de la población adulta de Villa María período 2019/2021. Es un estudio descriptivo, cuantitativo, transversal; el tamaño muestral fue 130 personas entre 19 y 70 años. Para la recolección de datos se utilizó un cuestionario estructurado que consta de dos secciones: una referida a características biosocio-culturales, datos antropométricos y de estilos de vida, y otra al consumo alimentario habitual que incluyó un cuestionario de frecuencia alimentaria, luego, a través del método Análisis Factorial de Componentes se crearon los patrones alimentarios Principales. Con respecto al estado nutricional, según el IMC, más de la mitad de la muestra (52%) posee algún tipo de malnutrición por exceso, del 52%, un 23% son mujeres y 29% varones; la mayoría de la población es activa en un 49%. El Valor Energético total se ubicó con un mínimo de 2200 Calorías consumidas por día y un máximo de 3200 Calorías. El 70% no tiene el hábito de fumar. En función de los resultados se identificaron 2 Patrones alimentarios que fueron denominados como, Patrón Saludable y Patrón no Saludable, el primero presenta elevadas cargas factoriales para verduras y frutas y el segundo para panificados, vegetales amiláceos, quesos, carnes, carnes procesadas y bebidas azucaradas; resulta necesario realizar educación alimentaria para promover una ingesta habitual de vegetales y frutas, y disminuir consumo de panificados, carnes rojas y procesadas, vegetales amiláceos y bebidas azucaradas para prevenir la prevalencia de malnutrición por exceso y la ocurrencia de ENT Universidad Nacional Córdoba.
