The records show a low proportion of cut marks, characteristic that can potentially condition the reconstruction of the processing and cooking sequences that were carried out with animal resources. For this reason, the aim of this paper is to reflect on the causes that would explain the scarcity of cutting marks in the archaeological-land complexes of the Río de laPlata coast. Different variables were considered, such as the instruments used, the actions performed and the skills of the processors in the processing practices of the different animal species. A partir del análisis de los conjuntos arqueofaunísticos recuperados en el litoral del Río de la Plata (partidos de Magdalena y Punta Indio, provincia de Buenos Aires) realizamos algunas interpretaciones acerca de las actividades de captura, aprovechamiento, procesamiento, cocción, consumo, almacenamiento y descarte de los recursos animales que las sociedades cazadoras, recolectoras, pescadoras y ceramistas llevaron a cabo en distintos momentos del Holoceno tardío. Los registros presentan una baja proporción de marcas de corte, característica que potencialmente puede condicionar la reconstrucción de las secuencias de procesamiento y cocción que se realizaron con los recursos animales. Por tal motivo, el objetivo de este trabajo es reflexionar en torno a las causas que explicarían la escasez de marcas de corte en los conjuntos arqueofaunísticos del litoral del Río de la Plata. Se consideran distintas variables como el instrumental utilizado, las acciones realizadas y las habilidades de los despostadores en las prácticas de procesamiento de las distintas especies animales.
