The way and scale in which capitalist civilization produces and consumes meat represents one of the main sources of contamination in an unprecedented moment of environmental crisis, which can be described as collapse due to its concatenated and irreversible effects. However, the capitalist system is incapable of stopping or slowing down the industrial production of meat, even though self-destructive logic materializes in it that progressively devastates the sources of its reproduction. This paper pursues three objectives: 1) Expose the reasons why the meatification of the world food system fulfills strategic functions for the expanded reproduction of capital, so it is not a market that the system can do without. 2) Point out the dimension that the meat industry represents in ecological collapse. 3) Point out some of the operations that meat consumption fulfills in the construction of social meanings. La producción y consumo de carne es una bomba de tiempo para el planeta. La forma y escala en la que la civilización capitalista produce y consume carne representa uno de los principales motores del cambio climático en un escenario inédito de crisis ambiental, que se puede calificar como colapso por sus efectos concatenados e irreversibles. No obstante, el sistema capitalista es incapaz de renunciar o desacelerar la producción industrial de carne, aunque en ella se materialicen lógicas autodestructivas que devastan progresivamente las fuentes de su reproducción. El presente texto persigue tres objetivos: 1) exponer las razones por las cuales la carnificación del sistema agroalimentario cumple funciones estratégicas para la reproducción ampliada de capital, por lo que no se trata de un mercado del que el sistema pueda prescindir; 2) poner de relieve la dimensión que ocupa la industria de la carne en el colapso ecológico; 3) señalar algunas de las operaciones que cumple el consumo de carne en la construcción de los sentidos sociales capitalistas.
