description The objective of this work is study the oral health and diet of populations that lived in the northern province of Mendoza during the XVII-XIX centuries. The prevalence of  caries, abscesses, tooth wear, loss of teeth and premortem explored. Compare and discuss the prevalences found to chronological and among population subgroups of different socioeconomic level. The sample consists of 85 individuals both adults and sub-adults of both sexes recovered from archaeological sites cemeteries Ruins of San Francisco and La Caridad. The results are presented for individual tooth and taking into account the age and sex. Differences chronological and spatial levels were observed as the degree of wear, the percentage of decay and tooth loss increased over time, and affected more to individuals buried in the sectors temple of higher status. The results are discussed in relation to historical and archaeological information.
