The objective was to enable them not only to ensure the quality of the food they produced, but also to help them become a local actor in spreading knowledge of family craft production of food. The direct beneficiaries of the project were the teachers and students of agricultural schools. The dynamics of work was designed so as to encourage learning the principles of food safety and its formalization in standard operating procedures. The methodological technique of workshop was applied to obtain a tangible product that proved to be useful for the teachers and students. Outreach activities were carried out locally in order to achieve the goal of knowledge sharing. The project made it possible to provide knowledge on food safety, contributing with guidelines to follow in manufacturing practices. Additionally, the process favored the interaction between institutions together with the achievement of a common goal and local dissemination of knowledge. Al considerar los aspectos que afectan al sector productivo agroindustrial familiar, en el año 2015 se desarrolló un proyecto de extensión por medio del cual se pretendió aportar a docentes y alumnos de escuelas de educación agraria, herramientas procedimentales que les permita no sólo asegurar la calidad de los alimentos que se producen, sino también convertirse en un actor local de difusión, hacia producciones familiares artesanales de alimentos. El proyecto contó como beneficiarios directos a los docentes y alumnos de las escuelas agrarias. La dinámica de trabajo seleccionada fue orientada a favorecer el aprendizaje de los principios de inocuidad alimentaria y su formalización en Procedimientos Operativos Estandarizados. Desde lo metodológico se empleó la técnica de taller, orientada a la obtención de un producto tangible de utilidad para los actores partícipes. Para el logro de la multiplicación de saberes fueron establecidos a nivel local actividades de difusión. Mediante el proyecto fue posible aportar saberes sobre la inocuidad alimentaria, contribuyendo con una orientación hacia dónde dirigir las prácticas de manufactura. En forma adicional el proceso favoreció la interacción entre las instituciones aunado al logro de un objetivo en común y la difusión de los conocimientos a nivel local.
