Sumario:This work examines the effect of phosphate buffer on the behaviour of Staphylococcus aureus ATCC 6538 P grown in laboratory media of reduced water activity (aw) achieved by adding different solutes (salts, sugars, and glycerol). A strong inhibition of S. aureus growth was observed in the systems containing phosphate buffer and to which NaCl of KCl were added to lower aw to about 0.90. This inhibition, however, was not found when non-electrolytes (sucrose, glucose or glycerol) were used to depress aw. © 1986.
