Sumario:The objective of present study was to test the Novasina Thermoconstanter electric hygrometer for aw measurements in the approximate range of microbial growth (~ 0.58-0.97). The most relevant characteristics of this hygrometer were the following: (a) a very high level of precision: (b) stability of the calibration curve; (c) adequate equilibration times: (d) a built-in temperature-controlled device for aw measurements in the temperature range 0-50 °C. These results indicate that the Novasina Thermoconstanter provides a convenient and reliable means of making aw measurements. However, additional studies are needed to verify the performance of the hygrometer when doing repeated measurements of aw in real foods which contain volatile components. © 1986 Academic Press Inc.
