Sumario:With the aim of taking advantage of the discarded fruits of the collection center, Finca San Agustín, the objective of the study is based on evaluating the physical-chemical and microbiological properties of the flour generated from the bark of the fruit grown in Palora, and which has the characteristic of being typical of the sector, the species underwent a recent change in botanical nomenclature in 2017, according to the study by (Korotkova et al., 2017) published in the journal Phytotaxa, 38.54% of the fruit corresponds to the bark , which after a process of selection, drying, extraction, and sieving is subjected to physical analysis obtaining as a result a high content of carbohydrates, and within the microbiological parameters is framed in the NTE INEN 1529-7, 1529-10, This allows a raw material to be available for the formulation of diets for animals in the area, and allows the producer to be offered a viable alternative for productive diversification.
