Sumario:This article analyses the regulation of markets through volunteers standards, observing how the mercantile logic fits into the core of the relations it intends to regulate, from the space of certification of organic products. It constitutes an exemplification of the decline of the regulation by the state in favor of fixing quality standards by private entities which, frequently, exercise their activities beyond the national borders.
