| Sumario: | This paper aims to contribute to the understanding of a phenomenon that is becoming more relevant to the peasants and indigenous groups that inhabit the Gran Chaco: homogenization and impoverishment of the dietary pattern of these populations. From an anthropology of food perspective, we developed a case study on the practices and representations linked to the production and consumption of Algarroba fruits (Prosopis Alba). The reconstruction of social trajectories associated with this food, is revealed as a significant device to account for the dynamics of transformations evidenced on its production, distribution and consumption over the past three centuries. |
