Sumario:Towards the middle of the 20th century, in Argentina, workers in the gastronomic sector began to denounce the existence of fraudulent corporate organizations whose purpose was to deceitfully cover up labor relations of dependence under the legal figure of Limited Partnerships. We maintain the idea that this strategy was possible thanks to the deep-rooted tradition in the industry that the establishments were exploited and sustained by the work of their owners (and/or their relatives). In a context of expansion of the rights of the working sectors, this strategy can be understood as a form of resistance by employers who, by ignoring the existence of dependency relationships, evaded the regulations that governed them and violated the rights of workers in the sector contemplated by their Collective Bargaining Agreements (CCT) and by Labor Law in general. The article is proposed as a contribution to the field of the social history of labor by promoting a reflection, which transcends the case analyzed, on the various forms that labor relations acquired in urban labor markets in Argentina and the ups and downs, marches and countermarches suffered by the extension of salaried work in them.
