Meat industry and, mainly, slaughterhouses and cold-storage plants have a preponderant role in the configuration process of the sector. These sites are features that gave character to their environment and were fundamental in the construction of the territorial identity and its cultural landscape. However, they were perceived by the society of the time as external, "marginal" components of the city. The approach to the study of this productive landscape deals simultaneously with the cultural and environmental history of landscapes, an approach that allows us to evaluate both the symbolic qualities and their relations with the environment. From this starting point, we focus on the analysis of cultural imaginaries which, from an environmental assessment, influenced the plans and urban projects that were proposed for the south of the city in the first half of the twentieth century. El presente artículo se propone indagar acerca del lugar que tuvo el paisaje ganadero en la escala del fragmento urbano a fines del siglo XIX y principios del XX, tomando como caso de estudio el sur de la ciudad de Rosario. La industria de la carne, fundamentalmente el matadero y los frigoríficos, tienen un rol preponderante en el proceso de configuración del sector. Estos sitios son piezas que le otorgaron carácter a su entorno y que fueron fundamentales en la construcción de la identidad territorial y de su paisaje cultural. Sin embargo, fueron percibidos por la sociedad de la época como externos, como componentes “marginales” de la ciudad. El enfoque con el que se aborda el estudio de este paisaje productivo consiste en estudiar simultáneamente la historia cultural y ambiental de los paisajes, aproximación que nos permite evaluar tanto las cualidades simbólicas como sus relaciones con el medio.
