Sumario:This paper explores the main contributions and transformations that took place among the subsistence studies in Mendoza province during the last 80 years. It is focused in the zooarchaeological, archaeobotanical and stable isotopes contributions, as well as in the generation of actualistic information. A statement of the current knowledge is presented, as well as an essay about human adaptative variability in relation to the type and intensity of the exploited resources, both in temporal and spatial scales. Finally, some future challenges are discussed, related to the possible lines of work and the applications of this knowledge to other applications outside our discipline
