Sumario:The “Andean Yuyos and Kutana´s Festival ‘’ is an annual event organized by the Original Community of Finca Valiazo, in the Valiazo locality (Humahuaca department, Jujuy province, Argentina). In this event occurs a “kutana contest”. Kutana is a mobile stone tool used to grind grains. We conducted ethnographic and archaeobotanical research on the culinary heritage of Jujuy. Besides, we carried out an ethnoarchaeological record of traditional recipes whose main ingredient is corn flour. The fieldwork was carried out during the 2022 and 2023 editions. Recipes and culinary equipment used were identified, and different specimens were collected as part of the Biocultural Ethnoarchaeological Collection originated in the framework of our research. The recovered information, as well as the collected samples, are of importance for the archaeobotanical studies carried out. They allow us to generate a reference collection of starch grains, phytoliths and plant residues. It also collaborates with the archaeological study of grinding stone tools. This corpus of information, systematized in a database, is used in the context of projects that aim to understand and enhance the pre-Hispanic food processing of plant-based ingredients in archaeological contexts of the Quebrada de Humahuaca.
