From a perspective focused on the Social Studies of the Economy, the wholesale markets of fruits and vegetables will be analyzed. To this end, its economic evolution is considered here in terms of current accumulation patterns from the mid-20th century to the present. The research was carried out based on the analysis of national, provincial and local policies and regulations and on a national survey of supply markets. The purpose and contribution of this research lies in demonstrating the risks of business concentration and its impact on the supply or on the Argentine domestic market. Examining the patterns of consumption and production related to this complex landscape sheds light on the vacancies that remain to be filled in this vast field of studies. En el presente trabajo analizamos los cambios en la regulación de la cuestión del abasto, en productos frutihortícolas en Argentina, en función de las transformaciones de los patrones de mercantilización. A partir de una perspectiva centrada en los Estudios Sociales de la Economía, se analizarán los mercados mayoristas frutihortícolas. Para ello aquí se considera su evolución económica dependiendo de los patrones de acumulación vigentes desde mediados del siglo XX hasta la actualidad. La investigación se llevó adelante a partir del análisis de políticas y normativas nacionales, provinciales y locales y de un relevamiento de alcance nacional de mercados de abasto. La finalidad y aporte de esta investigación reposa en demostrar los riesgos de la concentración empresarial y su impacto en el abasto o mercado interno argentino. Examinar las pautas de consumo y producción que atañen a este complejo entramado, ilumina vacancias aún por saldar dentro de este vasto campo de estudios.
