According to the liberal order, as that in force, among those centuries in this city the welfare was, above all, an individual responsibility. The liberal urban police state should ensure the physical and patrimonial security of the citizens as one of their missions of prime importance and by extention, they should also give sanitary guarantees. In a large overall view this obligation became stronger in thatperi- od due to the general extent of the social divition of work that kept away the producer from the consumer society. The state took control of the protection of interests of the citizens, at the same time consumers, who were the weakest part of the triptiych set up with regard to food supply of the city, formed by the state, the consummers and foodstaff producers and sellers. The state determined the basic regulations of the market and it became a proofreader agent of its functioning, limiting the selfish presure of the mercantile agents. El trabajo examina la cuestión de la calidad de los alimentos y las intervenciones del Estado en ella en la ciudad de Córdoba entre 1915y 1930. En un orden liberal como el vigente en la Córdoba de entre siglos, el bienestar era, ante todo, responsabilidad individual; sin embargo, dentro de esta tendencia general, existían algunas excepciones. El Estado gendarme liberal tenía como una de sus misiones primordiales velar por la seguridad física y patrimonial de los ciudadanos, por extensión, darles también ciertas garantías higiénico-sanita- rias. En una visión de larga duración, este imperativo se fortaleció en el período considerado, debido a la profundización general de la división social del trabajo, que alejaba al productor del consumidor de alimentos. El Estado asumió la protección de los intereses de los ciudadanos y, a la vez, consumidores, que eran el componente más débil del tríptico erigido en torno al abastecimiento alimentario de la ciudad, compuesto por el Estado, los consumidores y los productores y expendedores de comestibles. El Estado fijaba las reglas de juego básicas del mercado y se transformaba en un agente corrector de su funcionamiento, poniendo límites a las pulsiones egoístas de los agentes mercantiles.
