Although we consider that until the last decade of the 20th century the hospitality industry would not be able to spread as a professional task, we understand that since the 1940s there were attempts that articulated interests of the business and state sectors that, although they were not always successful or had the expected scope, constituted milestones within the gradual process of professionalization of the activity. This article aims to restore the role of vocational training institutions in this process, understanding that the professionalization process was fraught with tensions and ambivalences. If, on the one hand, it was based on gender stereotypes and specific conceptions of jobs and knowledge associated with them, on the other hand, enabled certain spaces and practices that allowed them to challenge.   En este artículo analizamos el papel que ocuparon las Escuelas-Hotel emplazadas en la ciudad de Mar del Plata en los intentos de profesionalización del trabajo en el sector hotelero entre 1940 y 1990. Si bien consideramos que hasta la última década del siglo XX la hotelería no lograría extenderse como una labor profesional, entendemos que desde la década del 40 del siglo pasado hubo intentos que articularon intereses del sector empresarial y estatal que, si bien no siempre fueron exitosos ni tuvieron el alcance esperado, constituyeron mojones dentro del paulatino proceso de profesionalización de la actividad. Este artículo pretende restituir el papel de las instituciones de formación profesional en dicho proceso de profesionalización, entendiendo que este estuvo cargado de tensiones y ambivalencias. Si, por un lado, se asentó sobre estereotipos de género y concepciones determinadas de los oficios y los saberes asociados a ellos, por otro lado, habilitó ciertos espacios y prácticas que permitieron desafiarlos.
