Sumario:Fick's diffusional model was used to fit drying curves of corn kernel in which the endosperm and germ were modeled as a homogeneous sphere with the pericarp being part of the external mass transfer resistance. Drying curves of whole and dehulled kernels were determined at 50°C and 60°C together with the equilibrium moisture contents at the respective temperatures. Diffusion coefficients for the corn kernel without pericarp and for the pericarp alone were determined by fitting the experimental drying curves to the diffusional model. It was found that moisture diffuses about eight times faster through the endosperm and germ than through the pericarp. The permeabilities of the pericarp at 50°C and 60°C were 1·8 × 10-7 and 1·6 × 10-7 g cm/cm2 atm s, respectively. © 1990.
